Cornish Hens with Apples and Tangy Marinade

Instructions
  1. Make the Marinade: Combine all marinade ingredients and whisk well. Wash the hens well, pat dry with paper towels, and put hens in a glass, rectangular pan. Pour the marinade over the hens, cover with plastic wrap, and let stand at room temperature for 1 hour.
  2. Heat the oven to 375°.
  3. Transfer the Cornish hens to a rack (set over a roasting pan) and season with salt & pepper. Place 2 apple quarters inside each hen. Roast uncovered for 1 ¾ hours. Remove from oven and let rest 15 minutes.
  4. Serve warm with wild rice and green & yellow wax beans. Enjoy!
