Cornish Hens with Apples and Tangy Marinade

Ingredients

  • 1 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 5 cloves garlic, smashed
  • 3 tablespoons whole grain mustard
  • 2 tablespoons lemon juice
  • 1 tablespoon dry white wine
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon lime zest
  • 4 22oz. Cornish hens
  • 2 red or green apples, seeded and quartered
  • Salt & freshly ground black pepper

Instructions

  • Make the Marinade: Combine all marinade ingredients and whisk well. Wash the hens well, pat dry with paper towels, and put hens in a glass, rectangular pan. Pour the marinade over the hens, cover with plastic wrap, and let stand at room temperature for 1 hour.
  • Heat the oven to 375°.
  • Transfer the Cornish hens to a rack (set over a roasting pan) and season with salt & pepper. Place 2 apple quarters inside each hen. Roast uncovered for 1 ¾ hours. Remove from oven and let rest 15 minutes.
  • Serve warm with wild rice and green & yellow wax beans. Enjoy!
