Cornish Hens with Apples and Tangy Marinade
Servings 4 people
Ingredients
- 1 cup brown sugar
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1/4 cup fresh lime juice
- 5 cloves garlic, smashed
- 3 tablespoons whole grain mustard
- 2 tablespoons lemon juice
- 1 tablespoon dry white wine
- 2 teaspoons Worcestershire sauce
- 1 teaspoon lime zest
- 4 22oz. Cornish hens
- 2 red or green apples, seeded and quartered
- Salt & freshly ground black pepper
Instructions
- Make the Marinade: Combine all marinade ingredients and whisk well. Wash the hens well, pat dry with paper towels, and put hens in a glass, rectangular pan. Pour the marinade over the hens, cover with plastic wrap, and let stand at room temperature for 1 hour.
- Heat the oven to 375ยฐ.
- Transfer the Cornish hens to a rack (set over a roasting pan) and season with salt & pepper. Place 2 apple quarters inside each hen. Roast uncovered for 1 ยพ hours. Remove from oven and let rest 15 minutes.
- Serve warm with wild rice and green & yellow wax beans. Enjoy!
