Ginger Peach Dressing

Ginger Peach Dressing
Makes: About 1 1/4 cup
Ingredients
- 1 medium sized peach
- 1/3 c. white wine
- 3 T. olive oil
- 3 t. balsamic vinegar
- 2 t. honey
- 2 t. fresh grated ginger
- 1/4 t. dried ground yellow mustard
- dash black pepper
Instructions
- Combine all ingredients in food processor, puree until smooth.
- Serve immediately over mixed greens or cover and store in refrigerator for up to 3 days.
