Fast Chicken Fajitas
Servings 4 servings
Ingredients
- 1 1/2 pounds boneless, skinless chicken breast cut into ยฝโ strips
- 2 tablespoons ground chili powder
- 1/4 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 3 tablespoons olive oil, divided
- 1 green bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1 onion, sliced thin
- 8 flour tortillas, fajita-sized
Instructions
- In a large glass bowl, mix together the chili powder, garlic powder, salt, and pepper. Add chicken strips and toss until well seasoned.
- In a large skillet over medium-high, heat 2 tablespoons olive oil until hot but not smoking. Add chicken and sautรฉ until cooked through, about 10 minutes. Remove the chicken and set aside. Heat the remaining oil in skillet, add peppers and onions and sautรฉ until tender, about 5 minutes. Return chicken to skillet with vegetables and heat through. Serve immediately.
- Serve fajitas in warmed tortillas
