Asian-Style Cold Noodles with Lemon Ginger Sauce

Ingredients

  • 12 ounce package soba noodles or other thin, Japanese-style noodle
  • 1/2 teaspoon sesame oil
  • 2 cups fresh microgreens such as mache, watercress, or mizuna
  • For the lemon ginger sauce:
  • 2 tablespoons lemon olive oil
  • 1 tablespoon sesame oil
  • 1 tablespoon lemon juice
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce or Tamari
  • 1 tablespoon maple syrup
  • 2 tablespoons ginger, freshly grated

Instructions

  • Cook the soba noodles in boiling salted water until just done, about 2 minutes, but still firm. Rinse in cold water. Toss with ยฝ teaspoon sesame oil.
  • Arrange the greens on a serving plate and top with the noodles.
  • For the sauce: Combine all ingredients and whisk well to blend and emulsify.
  • Drizzle noodles with the lemon ginger sauce.
