Asian-Style Cold Noodles with Lemon Ginger Sauce
Servings 4 people
Ingredients
- 12 ounce package soba noodles or other thin, Japanese-style noodle
- 1/2 teaspoon sesame oil
- 2 cups fresh microgreens such as mache, watercress, or mizuna
- For the lemon ginger sauce:
- 2 tablespoons lemon olive oil
- 1 tablespoon sesame oil
- 1 tablespoon lemon juice
- 3 tablespoons rice vinegar
- 1 tablespoon soy sauce or Tamari
- 1 tablespoon maple syrup
- 2 tablespoons ginger, freshly grated
Instructions
- Cook the soba noodles in boiling salted water until just done, about 2 minutes, but still firm. Rinse in cold water. Toss with ยฝ teaspoon sesame oil.
- Arrange the greens on a serving plate and top with the noodles.
- For the sauce: Combine all ingredients and whisk well to blend and emulsify.
- Drizzle noodles with the lemon ginger sauce.
