Asian-Style Cold Noodles with Lemon Ginger Sauce

Ingredients
12
ounce package
soba noodles or other thin, Japanese-style noodle
1/2
teaspoon
sesame oil
2
cups
fresh microgreens such as mache, watercress, or mizuna
For the lemon ginger sauce:

tablespoons
lemon olive oil
1
tablespoon
sesame oil
1
tablespoon
lemon juice
3
tablespoons
rice vinegar
1
tablespoon
soy sauce or Tamari
1
tablespoon
maple syrup
2
tablespoons
ginger, freshly grated
Instructions
Cook the soba noodles in boiling salted water until just done, about 2 minutes, but still firm. Rinse in cold water. Toss with ½ teaspoon sesame oil.
Arrange the greens on a serving plate and top with the noodles.
For the sauce: Combine all ingredients and whisk well to blend and emulsify.
Drizzle noodles with the lemon ginger sauce.
