Jalapeño Honey Cornbread

Ingredients

  • 1 c. all purpose flour
  • 1 c. cornmeal
  • 2 1/2 t. baking powder
  • 3/4 t. salt
  • 3 eggs
  • 1 c. milk
  • 1/4 cup butter, melted
  • 1/4 c. honey
  • 2 medium sized diced jalapeños

Instructions

  • Slice jalapeños lengthwise, remove seeds. Dice. Set aside.
  • In a medium bowl, stir together flour, cornmeal, baking powder, and salt. Set aside.
  • In a small bowl, combine eggs, milk, butter, and honey.
  • Add egg mixture to flour mixture. Stir until moistened.
  • Gently fold in diced jalapeños.
  • Pour into a greased 9” x 13” baking pan. Bake at 400º F for 15 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.
