Jalapeño Honey Cornbread

Ingredients
- 1 c. all purpose flour
- 1 c. cornmeal
- 2 1/2 t. baking powder
- 3/4 t. salt
- 3 eggs
- 1 c. milk
- 1/4 cup butter, melted
- 1/4 c. honey
- 2 medium sized diced jalapeños
Instructions
- Slice jalapeños lengthwise, remove seeds. Dice. Set aside.
- In a medium bowl, stir together flour, cornmeal, baking powder, and salt. Set aside.
- In a small bowl, combine eggs, milk, butter, and honey.
- Add egg mixture to flour mixture. Stir until moistened.
- Gently fold in diced jalapeños.
- Pour into a greased 9” x 13” baking pan. Bake at 400º F for 15 minutes or until a toothpick inserted near the center comes out clean. Cut into squares; serve warm.
