Ingredients

  • 4 pounds baby back pork ribs (2 full racks)
  • 4 tablespoons olive oil
  • Kosher salt & freshly ground black pepper
  • 2 cups ketchup
  • 1/4 cup cider vinegar
  • 1/4 cup Worcestershire sauce
  • 1/4 cup espresso or strong coffee
  • 1/3 cup brown sugar, firmly packed
  • 1 tablespoon molasses
  • 1 tablespoon honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon of your favorite barbecue rub
  • 2 teaspoons liquid smoke
  • 1/4 teaspoon black pepper

Instructions

  • Preheat oven to 325°F. Cut ribs into smaller sections. Rub olive oil over both sides of meat and season with salt and pepper. Put ribs in a single layer on a sheet tray and cover tightly with foil. Cook 2 hours until the meat is tender. Remove from oven, keep covered, and set aside.
  • Tuscan BBQ Sauce directions: Combine the ketchup, vinegar, Worcestershire sauce, coffee, brown sugar, molasses, honey, mustard, BBQ rub, liquid smoke and black pepper in a non-reactive saucepan. Bring slowly to a boil over medium-high heat. Reduce the heat to low and gently simmer the sauce until dark, thick and richly flavored, 10-15 minutes. Transfer the sauce to a bowl to cool.
  • Transfer ribs to a preheated grill and baste with Tuscan BBQ sauce until well coated and caramelized.
