Lavender Blueberry Quick Bread

Ingredients

  • 2-1/4 c. cake flour
  • 1-1/2 c. sugar
  • 2 T. baking powder
  • 1 t. salt
  • 3/4 c. cold butter
  • 4 eggs
  • 2 c. cold milk
  • 2 t. vanilla extract
  • 2 T. dried lavender buds
  • 3 c. fresh blueberries

Instructions

  • Combine flour, sugar, baking powder, and salt in a large mixing bowl. Cut butter into mixture until it resembles coarse crumbs.
  • In a small bowl, beat eggs, milk, and vanilla. Stir into dry ingredients until moistened.
  • Gently fold in lavender buds and blueberries. Pour into two 9″ x 5″ loaf pans.
  • Bake at 350° F for 60-70 minutes until bread tests done. Cool in pan for 10 minutes before transferring to wire rack.
