In a large skillet, saute chopped onion in olive oil over MED heat until translucent, 5 to 10 mins. Add garlic and cook for 1 additional minute.
Adjust heat to HIGH. Add wine and cook until nearly all the liquid evaporates (about 3 mins).
Adjust heat to LOW. Stir in the tomatoes, parsley, salt, and pepper. Cover, and simmer for 15 minutes.
Serve over your favorite pasta!
