Ginger Peach Dressing
A peach at its peak, a little ginger, and a splash of white wine,
This dressing works on everything from a simple green salad to grilled chicken to a bowl of roasted vegetables.

INGREDIENTS:
1 medium Fresh peach, pitted and roughly chopped
1/3 c White wine
3 T Olive oil
3 t Balsamic vinegar
2 t Honey
2 t Fresh ginger, grated
1/4 t Dried ground mustard
1 dash Black pepper
INSTRUCTIONS:
Combine all ingredients in a food processor or blender. Puree until completely smooth, about 30–60 seconds.
Taste and adjust — more honey for sweetness, more balsamic for tang, more ginger for heat. Serve immediately or cover and refrigerate for up to 3 days. Give it a good shake or stir before using.
NOTES:
Peach tip: Use a ripe, fragrant peach for the best flavor! This is a late summer recipe at heart. A peach that smells like nothing will taste like nothing in the dressing.
No food processor? A blender works perfectly. For a chunkier texture, mash the peach well with a fork and whisk everything together by hand.
White wine: A dry or semi-dry white works best. Pinot Grigio, Sauvignon Blanc, or whatever is open on the counter. Avoid anything too sweet.
Use it on: End of Summer Salad, grilled chicken, roasted vegetables, grain bowls, or as a marinade for pork. It's more versatile than it looks.
Storage: Keeps refrigerated for up to 3 days. The peach will oxidize slightly and darken in color. That's normal and doesn't affect the flavor.
