Asian-Style Cold Noodles with Lemon Ginger Sauce

Instructions
  1. Cook the soba noodles in boiling salted water until just done, about 2 minutes, but still firm. Rinse in cold water. Toss with ½ teaspoon sesame oil.
  2. Arrange the greens on a serving plate and top with the noodles.
  3. For the sauce: Combine all ingredients and whisk well to blend and emulsify.
  4. Drizzle noodles with the lemon ginger sauce.
